Salmon

Salmon  New Zealand Farmed King Salmon.  Farmed salmon was introduced by the Norwegians. Fresh salmon such as Chinook, or spring salmon, spend three to four years at sea before returning to spawn. Teriyaki salmon is a favourite Japanese dish.

Red snapper

Red snapper - kinmedai  is one of the healthiest fish, containing one gram of fat, 45 grams of cholesterol and no saturated fat. They are a reef fish and are in season the first 10 days of every month

Spanish Mackerel

Spanish mackerel  is not from Spain but from the Florida coasts. They have the darkest (and tastiest) meat of the Mackerel family and have spots or olive ovals on their sides. They are a member of the tuna family and are fast and powerful swimmers and are usually 2-3 pounds in weight but can reach 9-10 pounds.

John Dory

John Dory  is a Southern Australia fish with dark blotches on its sides. It was formerly know as St Peter Fish because the dark blotches were said to be the imprint of St Peter’s thumb as he took money from the fish’s mouth.
